Falling into Fall

Greetings, FitFooters!


We are taking a break from popups for a quick trip up to MA this weekend to enjoy the gorgeous fall weather and visit with loved ones.


Hope you are enjoying these autumnal days wherever you find yourself!


Here's a taste of what New England is like in the fall. And speaking of taste, scroll down for a recipe for a yummy apple bake that is gluten and dairy free.



The day started with a walk with Gunney the Golden in these Olympus Trail shoes by Altra. 👟


Then a run in Maudslay State Park.



And a hello to the parents! 👋🏼


Then some farm stands things. Corn, root veggies, and apples are in season!


Which then led to this apple bake thing that I made:


Preheat oven to 375 degrees F

Spray or butter an 8X8 baking dish and two large oven proof bowls/mugs or one 9x9 baking dish.


6 apples, skin on, sliced and cubed

3/4 cup of gluten free pancake mix

1-2 tablespoons of cinnamon

1/4-1/2 cup of brown sugar

1/2 stick Vegan butter (in stick form, if possible)


Wash, slice, and cube apples. Place in bowl and sprinkle with cinnamon. Add pancake mix and toss. Pour into the baking dish and mugs.


Cut cold butter into small cubes and mix gently with the brown sugar. Top the apples with this brown sugar and butter mix.


Bake for 45 mins or until the apples turn just slightly golden brown. Cool slightly and serve with vegan vanilla ice cream. 😋
